Take a Bow: 24 Sour cream and Raspberry Cupcakes with White Chocolate Icing

Season 2, Episode 1

Hello and welcome to Baking Natter, my diary of challenging myself to re-bake all the current Great British Bake Off Bakes. You may find yourself asking “Why, oh why would you do that?” - The answer is plain and simple and you can read all about the project (and me) in the About Me section!



Season 2, Episode 1 saw the GBBO judges as the bakers to make 24 signature cupcakes. This was a challenge I could relate to, something I was familiar with. A friend has asked me to make some cupcakes as a present for a baby shower and as this is my signature kind of cake and flavour I thought I would begin my blogging journal with these.



The reason I love this recipe is because it is so versatile, you can change up the icing as well as the fruit depending on what you are in the mood for and (of course) what is in season. It has never failed to get a massive “Mmmmmmhhhhhh…” out of those who have tried these little stunners of cupcakes. Just look at them, aren’t they gorgeous?! Trust me, they taste just as good as they look.


I adapted this recipe from a cake recipe I found on one of my favourite recipe haunts BBC Good Food and the icing has come as a bit of a result from my love for both cream cheese icing and white chocolate.

To make the cupcakes you will need:

 Mix the Butter and Sugar and Vanilla Paste together until they form a soft mixture.

Then sift in the flour.

Add the eggs....

... and beat until you are left with something like this!
Go on, lick the screen, you know you want to!


Then add the sour cream and beat until smooth.


Wash your raspberries....

... and add to your dough! 


Look at those colours, you can almost taste the sharpness of the raspberries against the sour cream.


Spoon in the cupcake cases... and bake for 25 minutes!




Leave them to cool before you ice them, to prevent the icing from melting. I usually make a traditional cream cheese icing for these and then add the white chocolate, a little bit of vanilla sugar and some extra icing sugar until I get the right consistency. 

The bows are quite literally the icing on the cake and while a little time consuming to make, they are totally worth it as it will leave the cupcake eaters with massive smiles on their face and many Instagram pictures being taken before consumption. 



Here is what you need:




Pop them on top of your finished cupcakes, dust with a little more glitter and voila, we have deliciously delightful cupcakes to devour! Fingers crossed that Paul and Mary would love these as much as I do.



The little boy is called "Monty" hence why he got a gold-glitter "M"
